Yellow beets are a great source of folate, manganese, beta-carotene, potassium, copper, and fiber. They also contain magnesium, phosphorus, vitamins B6 and C, and iron.
They are milder and sweeter than red beets. Plus they have less of that earth taste that beet haters don't like!
I usually find them at the farmer's market, but you can get them at Whole Foods or your local coop.

Mix all the ingredients in your 3 quart Instant Pot (or double or triple for larger IPs). Cook on manual/pressure cook on high pressure for 5 minutes. Release pressure manually. Store in fridge.
Store in the fridge for up to 2 weeks.
