Yellow beets are so pretty and a great way to get beet haters to try a new dish!

Yellow beets are a great source of folate, manganese, beta-carotene, potassium, copper, and fiber.  They also contain magnesium, phosphorus, vitamins B6 and C, and iron.

They are milder and sweeter than red beets. Plus they have less of that earth taste that beet haters don't like!

Where can I get Yellow  Beets?

I usually find them at the farmer's market, but you can get them at Whole Foods or your local coop.

What you need:

– peeled and diced yellow beets – water – apple cider vinegar – whole cinnamon stick – whole cloves – maple syrup,

Mix all the ingredients in your 3 quart Instant Pot (or double or triple for larger IPs). Cook on manual/pressure cook on high pressure for 5 minutes. Release pressure manually. Store in fridge.

Store in the fridge for up to 2 weeks.
