Vegan Instant Pot Vegetable Soup

An easy go-to soup for winter to keep you warm on a cold day. This is made with a lentil blend that helps make a hearty and creamy soup. Let's get started.

Instant Pot Lentil Vegetable Soup Ingredients FOR THE SAUTE – 1 small onion, minced – 1 clove garlic, minced

For the Soup: – 1 medium potato – 1 small sweet potato – 2 medium carrot – 1 cup lentil blend – 5 cups water – bay leaf – thyme – marjoram – smoked paprika – rosemary

AFTER COOKING – 1/4 cup nutritional yeast – salt and pepper, to taste

Instructions Saute the onion until translucent.  Add the garlic and saute a minute or two more.

Turn off the saute function and add all the soup ingredients.  Cook for 10 minutes.

Release the pressure naturally.  Stir in the after cooking ingredients and serve yourself a big bowl.  I like to have a big piece of crusty bread with it!
