Vegan Mushroom Congee Recipe

What is Congee?

Congee is a kind of Chinese rice porridge.  It’s made up of rice cooked up in extra liquid that breaks the rice down.

Congee Ingredients – water or veggie broth – sliced mushrooms: Use any combinations of: button, baby bella, shiitake , etc. – brown rice – fresh ginger

The Night Before

Prepare the mushrooms and ginger, and store in the fridge.

Did you know you can slow cook in your Instant Pot?

You can but there are a few things you should know....

Slow Cooking in Your Instant Pot

01 Do not cook dried beans on this setting.

02 Do not bake on this setting.

03 Do cook veggie recipes or ones that call for cooked beans.

04 Slow cooking in your IP will give you less evaporation that traditional ones.

05 You can use your IP cover on vent, or try a pot lid that fits.

06 It may cook hotter than an older slow cooker..

In the Morning

Add the water, mushrooms, rice, and ginger to your slow cooker or IP. Cook on low for 7 to 9 hours.

Topping Ingredients

– Soy sauce – Scallions – Cilantro – Chopped hot peppers – Leftover cooked veggies – Tofu cubes

Serve in Bowls with Choice of Toppings & Enjoy!
